I would suggest Maui. Got married there 2 years ago. The Fairmont Kei Lani is a great resort to stay at. All rooms are suites and very large.
References :
We got married on Lanikai Beach on Oahu. The Mokalua Islands are in the back ground of our pictures. We got married in March, which is whale migrating season, and were lucky enough to have some whales show up right after the ceremony. It was amazing. It's a lovely beach in a residential neighborhood so it's never crowded. We also rented a house there rather than a hotel (FYI - the Paul Mitchell Estate is on Lanikai Beach and available for rent). Our officiant was a Lanikai resident and the cake baker and florist were in Kailua (just up the road from Lanikai) It was perfect and I would not change one single thing.
References :
Last summer my best friend was married on the top of Black Rock at the Sheraton Hotel in Kaanapali, Maui:

http://www.starwoodhotels.com/sheraton/search/hotel_detail.html?propertyID=378

They stayed in the amazing Presidential Suite and had their ceremony right on their own private lawn on the top of Black Rock. The views were incredible. Afterwards I was glad we weren't on the sand, the view is much better from higher up.

There are several pools at the hotel which are connected by a lazy river. There is great snorkeling around Black Rock. We also went scuba diving at Molokini Crater, the boat left from Lahaina which is a short drive away from the Sheraton. The standard rooms at this hotel were very nice.

There is a pathway along the beach from the hotel which leads to a shopping center and some great restaurants. It's about a 10 minute walk.

If you are considering Kauai I recommend checking out Princeville however it's more expensive than Sheraton on Maui.

To be honest if you choose anywhere in Hawaii you will not be dissapointed! Have fun.
