I'm also a student at SUNY New Paltz, and you essentially answered your own question. He needs to take the Port Jefferson Branch from Huntington to Penn Station, and from there, walk to Grand Central where he will take the Hudson Line to Poughkeepsie.

Assuming that he buys both of his tickets online via WebTicket (which will save money as opposed to using a ticket machine or buying on board the train) and is riding an off-peak train, he will pay $15.68 for a round-trip ticket between Huntington and Penn Station, and $25.18 for a round-trip ticket from Grand Central to Poughkeepsie, making the total cost $40.86. If he instead chooses to buy his tickets using the machines, round trip between Huntington and Penn will cost $16.50, and round trip from Grand Central to Poughkeepsie will be $26.50, adding up to $43.00.

His whole entire trip is going to take at least a few hours.
References :
http://as0.mta.info/mnr/fares/choosestation.cfm

My friend, he can take the LIRR to Penn Station, where can transfer to Amtrak's Empire Service to Poughkeepsie. However, the fare ranges from $22 to $32. If that's to expensive for him, he can take LIRR westbound to Woodside, where he can then transfer to the #7 train to Grand Central.

From Grand Central, he can take the Hudson Line to Poughkeepsie. A round off peak ticket on the Hudson Line from GCT to Pougkeepsie cost $26.50.

Good luck
References :
native

The other answer (involving Metro-North) is mostly correct. However, it would make more sense to get off the LIRR train (the one from Huntington) somewhere in Queens near a #7 (Flushing) subway stop and take the #7 subway west to Grand Central than to stay on the LIRR to Penn Station.
References :
Once he gets to Penn Station, he can do one of two things:

1) take the subway to Grand Central Terminal, where he can catch a Metro North train to Poughkeepsie, or

2) take an Amtrak train from Penn Station to Poughkeepsie. Problem with Amtrak is that sometimes the tickets for a particular train is sold out, Amtrak trains don't run as frequently, and it would be more expensive than the Metro North.

Hope this helps.
